Peach Compote Swai

Ingredients
1.5 T Olive Oil5 cloves Garlic, minced1.5 cups chopped Sweet Red Peppers1 cup chopped Scallions1 cup chopped celery2 chopped, medium size fresh peaches1/2 teaspoon cayenne2 medium-large rinsed swai filets (1 pound)
Directions
1) Sautee garlic and red peppers in olive oil. After 5 minutes, add scallions and celery, cook 10 more minutes.

2) Add Cayenne and peaches. Cook 5 minutes, stirring and breaking down peach pieces with a wooden spoon as you go. Remove from pan and place in bowl. set aside.

3) Using the same pan, toss in two swai filets. After a few minutes, flip and cook another 3 minutes or so until just cooked through (fish will break or separate easily).

4) Remove fish from pan. Smother with Peach compote mix and serve.

Serving Size: Makes 2 dinner entr�es. Side Garden Salad recommemded.
