Awesome Zucchini Cakes

Ingredients
1 1/2 lbs. zucchini (I used 3 medium sized), shredded1 large onion, chopped1 c oats, coarsely ground in a food processor or blender1/2 c grated Parmesan3 eggs1 t saltAny other seasonings you like!
Directions
Spray a frying pan with non stick cooking spray. In a large bowl, combine ingredients in the order listed. Mix well. Form patties using 1/4 cup of the zucchini mixture at a time (I usually flatten them once they go in the pan). Place in the frying pan over medium heat. Cook about 4-5 minutes per side or until completely cooked through. Serve with sour cream or marinara sauce (not included in calculations).
