Ingredients
2 Mission , Low Carb Whole Wheat Burrito Size Tortilla8 oz Chicken Breast, no skin1/2 Tbsp Corn Starch1 Tbsp Peanut Butter, smooth style4 tsp Hoison Sauce1/2 tsp Crushed Red Pepper3/4 cup 99% FAT FREE CHICKEN STOCK1/2 tsp Sesame Oil1 Tbsp Extra Virgin Olive Oil2 tbsp chopped Green Onion (1 stalk)4 Tbsp Chopped Fresh Cilantro28 grams/approx 35 peanuts Crushed Cocktail Peanuts 2 Tbsp Fresh Pico de Gallo
Directions
Whisk in a bowl the chicken stock, Hoison sauce, crushed red pepper, peanut butter, and corn starch. Dice chicken into approximately 1.5 inch cubes. Heat olive oil and sesame oil in a saute pan. Cook diced chicken thoroughly, approximately 6-8 minutes. Add your sauce mixture, make sure it is brought to a boil, and simmer sauce until it is thickened. Warm tortillas, spoon 1/2 of the chicken with sauce into each tortilla, and fold tortilla around the chicken and sauce burrito style. Cover the wraps with the remainder of the sauce left in the pan. Top with cilantro, green onions, pico de gallo, and crushed peanuts to individual liking.
