Carba-Nada Baked Pasta with Chicken and Mushrooms

Ingredients
1 bag (10 oz) Carba-Nada Egg Fettuccini1 lb skinless chicken thighs, cut into 1" cubes1 T. EVOO1.5 cups chicken broth.75 cups shredded gruyere or swiss cheese2 cups fresh mushrooms, sliced
Directions
In large non-stick skillet, saute chicken in olive oil until brown on all sides. Season w/ salt and pepper, to taste.

Cook pasta in boiling water for just 2 minutes. Pasta will continue to cook in the oven.

Place pasta in greased casserole dish. Top with chicken, then mushrooms. Pour broth over all then sprinkle with cheese.

Bake at 350-degrees for 30 minutes.
