Ingredients
4 fresh beets with tops1 medium sized cucumber2 green onionsfresh dillplain kefir
Directions
- Peel and grate the beets. Chop the stems into 1/4" pieces. Save the greens for something else, they're tasty.
- Put the beets and stems in a pan with just enough water to cover, add salt and simmer about 15 minutes until beets are tender.
- Let beets cool, do not drain.
- Grate the cucumber.
- Chop green onions into 1/4" pieces.
- Chop the fresh dill.
- Add cucumber, green onions, and dill to cooled beets.
- Add enough kefir to turn the soup a bright hot pink (about 2 cups)

Serving Size: Makes 6 2-cup-ish servings
