Chicken Parmesan

Ingredients
2 teaspoons sesame oil2 boneless, skinless chicken breast halves1/4 cup Italian flavored bread crumbs1 Tbsp. basil1 cup Healthy Choice Pasta Sauce1/4 cup shredded, low fat, parmesan cheese2/3 cup fat free mozarella cheese
Directions
1. Heat oil (medium high temperature) in nonstick 10 inch skillet
2. While pan is heating, coat chicken pieces with bread crumbs and basil
3. When the pan is hot, brown chicken on both sides
4. Add pasta to the top of each chicken piece.
5. Pour about 1/4 cup water into the pan (DO NOT POUR THE WATER OVER THE CHICKEN)
6. Cover with a see through lid and reduce heat to low.
7. Allow to simmer for about 15 minutes
8. Sprinkle cheeses over the salsa
9. Place see through lid over pan and allow cheeses to melt.
10 If you have an oven safe skillet, you can melt the cheese in the oven on broil. Do not over cook.
If you use the oven, be sure to skip step 9.

Chicken will be very moist and tender. My husband does not care for chicken but he will eat this without complaint
