Warm Chicken & Bacon Salad with Honey Mustard & Cherry Tomatoe Sauce

Ingredients
Romaine Lettuce (salad), or, little gem - outer leavesChicken Breast, no skin, 2 breast, bone and skin removed - medium - cut into stripsShallots, 2 tbsp choppedGarlic, 3 clove, finely chopped, or, crushed$ rashers of unsmoked baconManuka honey per 1 tbspDijon Mustard, 3 tbspExtra Virgin Olive Oil, 2 tbspDried Chilli flakes, 1 tspJuice of 1 lemon10 Cherry tomatoe's, halvedBasil Fresh, 2 tbsp, chopped
Directions
- Split whole rommaine leaves between two dishes
- Finely chop garlic and onion and saute in 1 tbsp of olive oil in a frying pan until soft
- cut chicken into strips and add to the pan; frying until cooked through
- Divide chicken, onion and garlic between the two plates
- Add the other tbsp of olive oil to the pan and fry bacon until crispy. Remove amd dry on kitchen paper
- Add remaining ingredients to the juices of the pan and fry for a few mins until tomatoes cook
- Crumble bacon between two plates and then add sauce mixture evenly across
