quinoa/lentil/vegetable salad

Ingredients
quinoa, cups (dry)lentils, cups (dry)2 cloves garlicwater, 3 1/2 - 4 cups2 red peppers, diced (around 3 1/2 c)1 large tomato, diced (around 1 1/4 c)1 c corn (can be frozen corn)2 c chopped cilantro (loosely pack)1/2 c scallions1/2 T ground cumin1/2 T no salt seasoning1/2 c lime juice1/4 c olive oil***salt to taste***
Directions
cook quinoa, lentils, and garlic in the water. I use a pressure cooker (7-10 minutes); standard stovetop will be 30-45 minutes. Meanwhile, chop the veggies and combine. Let the quinoa/lentil mixture cool when finished. Combine.
