Donna's Veggie Marinara

1 tbs. Olive Oil1/2 Shallots/chopped1/2 green bell pepper chopped1/2 bag of sliced mushrooms1 clove of garlic/ finely chopped1- 28 oz can of crushed tomatos (San Marzano are best)1 teaspoon of italian seasoning1 oz of Romano cheese/ gratedsalt and pepper to taste
saute the shallots, peppers and mushrooms in the olive oil until peppers are soft, add garlic and saute a few minutes more (don't burn the garlic). Add the can of tomatoes (I usually add a bit of water to the can and add that in as well to get all of the tomatoes). Add seasoning and cheese. Taste and add a bit of salt and pepper. Simmer 20-25 minutes to marry the flavors.
