Non-Dairy Brown Rice Pudding

1 cup cooked brown rice1 cup non-dairy beverage of your choice (I use almond milk)2 tsp packed brown sugar, or sweetener of your choice1 large egg1 tsp cinnamon, to taste
Whisk egg, sugar, and cinnamon into non-dairy beverage in a medium saucepan. Add all of the cooked brown rice to the mixture, and let it simmer for 20 minutes, or until it has thickened. Stir frequently. Serve warm, or enjoy it chilled. Feel free to add nuts or raisins. Serves 2
