Banana Maple honey muffins

2 c whole wheat pastry flour1 1/2 tsp baking powder1/4 tsp baking soda1/4 tsp salt1/4 tsp ground ginger1/4 tsp ground cinnamon2 large eggs1/4 c maple syrup1/4 c honey1/2 c packed light brown sugar1/3 c skim milk (can use whole as well)1/4 c canola oil1/4 tsp vanilla 1 1/2 c mashed banana (about 4)Can add 1/4 c chopped nuts or all maple syrup.
Whisk dry ingredients together. Set aside. Whisk wet ingredients together, add banana, mix well. Add banana mix to dry, fold together, do not over mix.
Add nuts, if desired. Spoon into muffin tins. Bake at 375 degrees for 15 minutes for mini or 20-30 min for full size.
