Lean and Beefy Taco Salad

Ingredients
8 oz lean ground beef2 tsp taco seasoning12 oz yellow sweet corn1-1/2 cups pinto beans1 cup shredded cheddar or colby cheese, low fat5 oz light tortilla chips6 tbsp sour cream, reduced fat4 tbsp taco sauce medium1 cup iceberg lettuce, shredded or chopped1 cup tomatoes, chopped or sliced 1/2 cup onions, chopped
Directions
Brown ground beef.
Add seasoning mix, corn, pinto beans, and taco sauce.
Simmer for approximately 10 - 15 minutes.
Sprinkle cheese over the top of the mixture and allow to melt.
Serve in about 1/2 cup portion with a tbsp of sour cream, lettuce, tomatoes, onions and approximately 6 large tortilla chips crushed over the top.

    This receipe can be modified, try black beans and eliminate the mean. Black beans have protien, and dont use sour cream use fat free greek yogurt which is nice an thick and taste great. Use romaine lettuce instead of iceburg, add cliantro, fresh salsa add avocado as well. Deduct the chips. - 4/2/09

    The recipe sets up the idea and then you can customize to your taste. I exchanged the iceberg for romaine; the sour cream for non fat yogurt; toasted a corn tortilla instead of chips. it was so quick and delicious - 4/29/09

    This was so very good. I try to eat 5 small meals a day so I freezed it in 10 small baggies and it freezes very well. I just put it over a small bed of lettuce and no chips. It doesn't need them...it's so flavorful. - 1/13/10

    I added black olives to mine and skipped the beans and corn, very good. We added the taco sauce to the salad instead of just the meat. - 9/29/16

    Usually put the beans and corn in cold, so it was a nice change to heat them with the meat and add the cheese to melt. Added avocado, used fresh made pico de gallo, romaine lettuce and did not use any type of sour cream. Very tasty and will make again. - 7/24/15

    Nice alternative version of a Taco Salad. It was very good. I could see using black beans instead of pinto beans or even forgoing the lettuce and use the whole wheat scoops. I made a double batch for leftovers for work lunches and dinners. - 2/17/13
