HCG Shrimp Curry & Spinach

Ingredients
3.5 oz shrimp1/4 cup onion, chopped1 cup vegetable broth (divided) or 1 cup water and 1 teaspoon vegetable broth seasoning2 cloves garlic, minced1/2 teaspoon curry powder1/4 teaspoon chili powder1/4 teaspoon cumin1/4 teaspoon turmeric2 cups chopped spinachJuice of 1/4 lemon
Directions
In a tiny bowl, mix the curry powder, chili powder, cumin, and turmeric. Set aside

Pour 1/4 cup veggie broth into a skillet. Saute the onion until soft. Add the shrimp, garlic, and seasonings until shrimp is done to your liking.

Cover and remove from heat.

Pour the remaining 3/4 cup broth into a saucepan. Bring to a boil and add the spinach. Cook and stir just until wilted.

Put cooked spinach on your plate. Drizzle with lemon juice. Top with the shrimp curry.
