Pink Mint Ice Pops

Ingredients
2/3 cup water 3 Tbs. sugar 7 fresh mint leaves 1 cup plus 2 Tbs. pure pink grapefruit juice
Directions

To make the mint syrup, in a small saucepan mix water, sugar and mint. Bring to a simmer, cover, reduce the heat to low and continue to simmer for about 5 minutes. Take mint leaves out and refrigerate until cool. Once sauce is cooled add grapefruit juice and stir. Pour into popsicle molds. Freeze until solid. Enjoy.
