6 oz salmon filletOlive oilButter
Preheat oven to 425 degrees Fahrenheit. Barely cover bottom of frying pan with olive oil, and heat on medium high until oil starts to move, but NOT smoke. Add butter, and when butter has melted, place fillet seasoned with coarse salt and freshly ground pepper, flesh side down, for 4 minutes. Remove from heat, flip fillet, cover, and place in oven for 10 minutes.
This recipe comes out perfectly EVERY time, whether fish is fresh or frozen.
