Ravioli Soup

1 cup carrots, thinly sliced5 cloves garlic1/2 lb sweet Italian sausage 4 cups vegetable broth2 (14 oz) can's diced Italian tomatoes1 can tomato sauce (8oz)salt and pepper to tasteItalian seasoning-I use about 1 T1/2 pkg frozen mini ravioli- we like cheese but any flavor works2 cups spinach, shredded(If I'm making this just for me I add more spinach and a diced onion-they just don't pass the kid test at our house)
Brown and drain meat, add in carrots and garlic, cook 4-5 minutes. Add in broth, tomatoes, sauce, and seasoning. Bring to a boil, reduce heat, and simmer for 15 minutes. Add ravioli and spinach, good for 6-8 minutes. Serve with a sprinkle of Parmesan cheese.
