Red Cabbage chicken salad

Ingredients
2 cups cooked chicken-4 Tbsp of seasoned rice vinegar2 tsps olive oil1 Tbsp soy sauce1 tsp sesame oil2 tsps ground ginger1/4 cup thinly sliced scallions4 cups shreded red cabbage1 large yellow pepper- sliced into thin strips1 cucumber-with or without peel-thinly sliced1/4 cup slivered almonds- may be toastedJuice of 1 lemon or limePepper and salt to taste
Directions
1. Cut cooked chicken into cubes- set aside
2. In a large bowl add: rice vinegar, olive oil, soy sauce, sesame oil, lime juice, and ground ginger- wisk ingredients
3. to same bowl add cabbabe, onions, cucumber, yellow pepper
4. mix thoroughly
5 . add salt and pepper to taste
6. Add chicken and mix
7. sprinkle the slivered almonds
You can also serve the cabbage mixture on individual plates and top with the chicken
