Impossibly Easy Mini Breakfast pies

Baking Mixture:1/2 C Bisquik Mix ( I used Heart Smart)1/2 C 1% Milk2 large eggsAdd Ins: (totally customizable)3/4 lb breakfast sausage (I used a package of turkey smokey links thinly sliced)1C fresh spinachabout 6 grape tomatoes halfed1c shredded cojack cheese
Mix first three ingredients, set aside
Cook sausage, add spinach, tomatoes cook until spinach is wilted. Top with cheese and let melt
Spray muffin tins with non-stick spray then add 1 tbsp of baking mixture to each muffin cup
Then add a 1/4 of the add ins mixture to each cup
Top with another 1 tbsp of the baking mix
Bake at 375 for about 25-30 minutes
Cool, then freeze or put in fridge
Can be reheated in microwave. When from fridge I nook 2 for about 30 seconds
Serving Size: makes 12 muffins or 6 2-muffin servings
