Vegetarian Chili

Ingredients
1 can each pinto, black, and light red kidney beans1 cup chopped onion3 cloves garlic, chopped1 cup green peppers, chopped1 can Ro-tel tomatoes1 6 oz. can tomato paste1 T. chili powder2 T. olive oil
Directions
Saute chopped veggies in olive oil.
Add drained canned beans, canned tomatoes and paste, and chili powder (more to taste)
Simmer about 30 minutes. Add water if needed to keep from sticking.

good served over rice and topped with cheese
