Breakfast Casserole Cups

Ingredients
1 egg white, beaten1 slice bacon, cooked and crumbled4 grape tomatoes, quartered2 tablespoons shredded low-fat sharp Cheddar Pinch black pepper Pinch cayenne pepper1/2 medium Russet potato, grated (about 1/2 cup)
Directions

Preheat the oven to 400 degrees, then coat two wells of a muffin tin with cooking spray.
Combine all ingredients in a small bowl, then pour into the prepared pan.
Bake for 20 minutes, remove from the oven, and let the cups rest for a minute. Use a knife to loosen the edges of each cup and serve immediately.


Serving Size: Makes 2 casserole cups, 2 per serving.
