Guiltless Cabbage Salad

1 lb green cabbage, cored and shredded1/2 lb red cabbage, cored and shredded2 carrots, peeled, trimmed and shreddedSalt as needed1 cup bean sprouts, cleaned1/2 tbsp extra virgin olive oil2 tbsp apple cider vinegarBlack pepper to taste
In a colander, combine cabbages and carrots.
Toss with enough salt that leaves exude moisture within 10 or 15 minutes.
Let sit an hour or two, pressing out moisture out with your hands once or twice.
Rinse and dry. Toss with sprouts, oil, vinegar and pepper. You may need a little coarse salt as well.
Keep in the fridge until ready to serve, this is a great keeper.
