Blueberry Oatmeal Muffins

Ingredients
Milk, nonfat, 1 cup *Quaker Oats - Quick 1 Minute - Dry, 1 cupEgg, fresh, 1 large *Canola Oil, .25 cup *Flour, white, .5 cup*Whole Wheat Flour, 0.5 cup Granulated Sugar, .25 cup Baking Powder, 2 tsp Vanilla Extract, 1 tsp Salt, .5 tsp Blueberries, fresh, 1 cup
Directions


Preheat oven to 425 degrees F (220 degrees C). Grease muffin cups or line with paper muffin liners.
In a small bowl, combine milk and oats; let soak for 15 minutes.
In a separate bowl, beat together egg and oil and vanilla; stir in oatmeal mixture. In a third bowl, sift together flour, sugar, baking powder and salt. Stir flour mixture into wet ingredients, just until combined. Add the blueberries at this point and mixed gently until incorporated. Spoon about 1/4 cup of batter into prepared muffin cups until cups are 2/3 full.
Bake in preheated oven for 20 to 25 minutes, until a toothpick inserted into the center of a muffin comes out clean.
