High Fibre Berry Mini Muffins

1.5 - 2.5 cups of High fibre bran cereal - Blended into fine flour3/4 Cup Almond Meal2/3 Cup White Flour (or alternative)2/3 Cup Flaxseeds4 Tbs Lecithin (optional)1/3 Cup Brown Sugar (or alternative)2 Eggs2/3 Cup Milk1 Cup Mixed Frozen Berries
Preaheat oven to 180 degrees celcius or 350 Fahrenheit. Grease silicon muffin tray (12) or mini muffin tray.
Combine Bran 'Flour', Almond Meal, White Flour, Flax Seeds, Brown Sugar, Lecithin in bowl. Beat in 2 eggs and milk. Microwave frozen mixed berries for 30secs-1min and fold into mixture.
Bake for 15-20 mins or until just crispy on top.
** Note due to the density, these muffins are small bite sized snacks, they do not rise. For a bigger muffin, double mixture and use large muffin tray. I would suggest using less bran flour and more plain flour to avoid a dense consistency and fibre overload. Whole wheat flour or blended oats (to make flour) can be substituted for white flour however will make muffins dense.
