2 cups flour3/4 cup sugar1 1/2 tsp baking powder1/2 tsp baking soda1 tsp. salt3/4 cup pecans1 large egg1/4 cup vegetable oil2 tsp grated orange peel3/4 cup orange juice1 1/4 cup finely chopped rhubarb
Combine flour, sugar, baking powder, baking soda, salt and nuts in a large bowl. Beat egg in a medium bowl. Add oil, peel and juice. Add to flour all at once. Stir just until batter is moist. Stir in rhubarb. Bake at 350 degrees F for 25 to 30 minutes.
