Zucchini Bread Baked Oatmeal (vegan, with protein)

1/4 c rolled oats2 tbsp fiber bran cereal1/3 c unsweetened almond milk (or water)1 tsp cinnamon1/4 tsp nutmeg1/4 tsp almond extractdash of salt1/2 c grated zucchini (about 1/2 of a medium baby squash)1 tbsp vanilla sun warrior protein powder1 walnut half, broken into tinier pieces
Preheat oven to 375.
Grate your zucchini.
Grease a mini baking pan i.e. mini loaf pan with nonstick spray.
Combine all ingredients (including sweetener to taste!) in a bowl, and then pour into baking dish. Press pieces of walnuts into batter. Bake for 20-22 minutes or until browned and firm; then broil for an additional 3.
Serving Size: makes 1 serving
