Cod in Tomato Sauce

Ingredients
4 fillets of cod (may be frozen)2 cans of diced tomatoes w/ basil, garlic, and oregano1 onion, sliced thin1 c. edamame (shelled)1 c. quinoa, cooked as directed
Directions
Start quinoa according to package directions. Saute the sliced onions until translucent. Add edamame and canned tomatoes. Lay 4 pieces of cod on top, cover and allow to simmer. Takes about 10-15 minutes, depending on if the fish is frozen. Serve 1/4 c of quinoa w/ filet on top, place 3/4 c of tomatoes and sauce on top.
