Ginger, Pear, Vanilla Quick Bread

Ingredients
2 cups all-purpose flour (would work just as well with wheat flour too I think.)1/4 cup margarine1 cup Splenda2 eggs, beaten1 1/2 tsp vanilla extract1 tsp lime juice (the recipie called for zest of one lemon. I only had lime juice around the house - I think the important thing is to provide a slight citrusy flavor.)1 - 1 1/2 tsp ground ginger (ginger is potent, so it really depends on how strong you want this flavor to be)1 tsp baking powder1/2 tsp baking soda1/2 tsp salt1/3 cup Light Vanilla Soy Milk1 1/2 cup pears ( sliced, peeled, and then diced)
Directions
Pre-heat oven to 350 degrees F

Spray a 9x5" bread pan with PAM or an oil spritzer

Sift flour, baking powder, baking soda, salt, and ground ginger together in a bowl and set aside.

"cream" together margarine, Splenda, and lime juice (Splenda doesn't really cream like sugar does, so one really mixes it togehter more than anything)

add beaten eggs, one egg at a time. Mix dfirst egg in well befroe adding the second, and repeat the mixing process

Alternate mixing 1/3 of the flour mixture and 1/2 of the soy milk, being sure to completely mix in the dry ingredients. Duplicate this process until you add the very last of the flour (ending with the flour). Mix in until flour starts to disappear.

Fold the diced pears into the batter and then scrape the batter in to bread pan.

Cook for 50-60 minutes - check the bread sooner if you don't trust your oven.

This recipie makes about 9 slices - perfect for breakfast or a snack to go with your coffee.
