Shrimp & Veggies Pasta

Ingredients
Directions
2 tbsp Olive Oil1 cup of chopped Onion3 cloves of minced Garlic1/2 cup, strips or slices, of Carrot1 cup, pieces or slices, of Mushrooms40 large Shrimp (tails removed)2 cans of Tomatoes (2-14oz.)1 cup of Frozen Green Beans1 cup of Frozen Yellow Sweet Corn Kernels8 oz. of Barilla Plus, Penne Pasta4 dashes of Sea Salt4 dashes of Black Pepper1 tsp Cayenne Pepper4 tbsp of shredded Parmesan Cheese (optional)
Cook pasta according to directions until Al Dente.
Saute Garlic, Onion, Carrot, and Mushrooms in Olive Oil for 3-5 or until soft. Remove from pan and then add shrimp and season with salt and pepper and cook for 2-3 minutes. Add the Tomatoes, Frozen Green Beans and Frozen Yellow Sweet Corn Kernels and the Garlic/Onion/Carrot & Mushroom mixture back into the pan. Add Cayenne Pepper and Mix well and bring to a bubble (about 5 minutes). Remove from heat. Add Pasta to sauce, mix, and serve.
Top with Parmesan Cheese (optional)
