Thai Basic Chicken Curry

1 cup fresh basil leaves1 lime (about 1 tbsp juice)4 cloves garlic1 jalapeno (optional)2 tablespoons coconut oil2 cups chicken stock1 tablespoon brown sugar1 tablespoon soy sauce2-3 tablespoons red curry paste1lb boneless, skinless chicken thigh, about 4 thighs.
Add oil to a wok or large frying pan over medium-high heat.
When oil is hot enough to sizzle, add the chicken a little at a time. When chicken is opaque on both sides, remove from pan and set aside. Add next batch.
Add the red curry paste and mix in well.
Add the basil, jalapeno and garlic. Mix, and wait for it to become fragrant.
Add the chicken broth. Slow simmer for 10 minutes.
Add the soy sauce and lime juice last.
