Lo Mein Noodles with Mixed Vegetables

Ingredients
5 lean pork chops, all visible fat removed4 large carrots2 baby zucchini8 scallions8 ounces fresh green beans16 ounces Kame Lo Mein Noodles1-inch piece fresh ginger, shredded1 fresh red chili, slicedfew bok choy leaves, roughly chopped1 cup bean sprouts6 T. soy sauce3 T. Chinese rice wine vinegar1 t. sugar4 T. roughly torn fresh cilantro leaves
Directions
Slice the pork into bite-size pieces. Heat 1 T. oil and stir fry pork until no longer pink. While the pork is cooking cut the carrots and zucchini into fine sticks. Shred the scallions into similar-sized pieces. Trim the beans and cut them into short lengths. When the pork is cooked remove from pan and set aside. Boil the lo mein noodles according to package directions. Drain and set aside. Place 1 T oil in wok - when hot, add the beans and stir-fry for 2-3 minutes. Add the ginger, red chili, carrots and zucchini and stir-fry for 1-2 minutes. Add the bok choy, bean sprouts and scallions. Stir-fry for 1 minute, then add the soy sauce, rice wine vinegar and sugar. Cook, stirring for about 30 seconds. Add the noodles, pork and cilantro and toss to mix. Serve immediately.
