Cranberry Orange Oat Cookies

Ingredients
Egg, fresh, 2 large Butter, unsalted, 1/2 cupCinnamon, ground, 1 tsp Nutmeg, ground, 1/4 tspInstant, Quick, and Regular Oats Cereal, 2 cupApplesauce, unsweetened, 1/3 cup Cranberries, 1 cup, choppedOrange Juice, 1/4 cupBaking Soda, 1 tspBrown Sugar, 1 cup, packed Sugar, 0.5 cupFlour, white, 2 cups
Directions
DIRECTIONS

1. Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
2. In a large bowl, cream together the butter, white sugar and brown sugar until smooth. Mix in the applesauce, eggs, orange juice and orange zest one at a time, mixing well after each. Combine the flour, baking soda, cinnamon and nutmeg; gradually stir into the orange mixture. Fold in oats and cranberries. Drop by rounded spoonfuls onto the prepared cookie sheets.
3. Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

    I wish you'd said how much orange zest! Is that the peel of an orange? How much? I hope this turns out because I'm in the middle of it! I used 1 Tbsp. Orange peel chopped. They're yummy! - 12/5/09

    I substituted 1/2 the flour for whole wheat flour, nixed the white sugar altogether, and left the cranberries whole. I just used the juice from navel orange, and added the zest (about one tablespoon) and I am very pleased with how they turned out! A very generous cookie for the calories! - 4/14/08

    1/2c.softened butter,1/2c white sugar,1c. brown sugar, 1/3 c. applesauce, 2 eggs, 2T. O.J, 1 tsp baking soda, 1 tsp. cinnamon, 1 dash nutmeg, 1 c.fresh cranberries roughly chopped,2 c. oats...then follow the directions listed above - 1/22/08
