Banana Muffins

1 cup all-purpose flour3 tsp baking powder1/2 tsp baking soda1/8 tsp salt1 cup mashed bananas1/4 cup sugar1/4 cup applesauce1 egg1/2 tsp vanilla extract
Preheat oven to 350 degrees. Grease pan or line with muffin cups.
Mix together flour, baking soda, baking powder and salt. In another bowl beat together banana, sugar, egg and vanilla. Stir in applesauce. Stir the wet mixture into the flour until just combined. Pour evenly into muffin pan.
Bake for 15 to 20 minutes or until a toothpick inserted into the center of a muffin comes out clean. Let cool before serving.
To keep flavor store in an airtight container or bag.
