Low- Carb Chicken & Broccoli Alfredo

3 boneless skinless chicken breasts1 cup chicken broth (or water & 1 bullion cube) 3 cloves (3 tsp) crushed garlic 1/2 brick (8 oz) 1/3 less fat cream cheese8 oz. bag shredded Italian blend cheese ( I like provolone, mozzarella, parm.) 10 oz bag frozen broccoli
Boil the chicken breasts in the broth and garlic until cooked through. Once cooked, remove & allow to cool. While chicken is cooling add cream cheese and half of shredded cheese to broth and whisk until combined. Once chicken is cool enough to handle dice into bite size cubes. Add chicken and frozen broccoli to cheese sauce & cook until broccoli is heated. At this point you can pour into a baking dish and top with remaining shredded cheese. Broil for 5 min. until bubbly. Alternatively you can just sprinkle the remaining cheese on top of each serving as desired.
