Ingredients
1/2 pound carrots, peeled and grated1 TBS olive oil or walnut oil1 tsp lemon zest1 TBS fresh lemon juice1 TBS fresh orange juice1 TBS honey1/4 c dried cranberries1/4 c toasted walnuts, chopped1TBS scallions, thinly sliced1.5 TBS fresh parsley, chopped1/4 tsp salt1/8 tsp fresh ground pepper
Directions
In a medium bowl, combine all ingredients, mixing well. Cover and refrigerate for at least 15 minutes.
