Sweet Potatoes with Apples & Brown Sugar

1 TBS unsalted butter1/2 TBS vegetable oil3 cups sweet potatoes or yams, peeled and cut into 1/4" rounds3 red apples, peeled and cored, sliced into 1/4" thick half rounds1/4 cup brown sugar (light or dark)1/2 tsp salt1/4 c apple juice
In a large skillet on medium heat, melt butter. Add oil once butter is melted. Swirl to combine.
Add sweet potatoes and apples, tossing gently to coat (you don't want to break up the apples). Stir in brown sugar and salt. Once combined, add in apple juice.
Reduce heat to low. Cover and cook until sweet potatoes are tender, about 30 minutes. Stir occasionally, but be gentle so you don't break up the apples.
When the potatoes are tender, remove lid and increase the heat to medium. Cook for five minutes, turning the apples and potatoes carefully so they don't burn. The juices will boil away.
Serve and season with fresh ground pepper.
