Mix In the Pan Frittata

Ingredients
4 eggs - lightly beaten (I used 2 eggs and egg beater to minimize fat)3/4 cup each Smart Balance Mayo and 1% milk2 cups frozen hash browns6 slices Turkey bacon, chopped 2 cups broccoli florets1 medium red pepper, cut into strips1 tbsp dried onions3/4 cup shredded cheese
Directions
Preheat oven to 400 F .
Combine eggs, dressing and milk in greased 2 qt. baking dish. Add hash browns, bacon and veggies.
Mix until well blended.

Sprinkle with cheese.

Makes 8 servings.
