Andrea's Sour Cream Mashed Potatoes

5 easy ingredients... you probably already have these around your house! Sour Cream, reduced fat, 1/2 cupMilk, nonfat, 1 cupFresh Chives (or dried), 1.5 tsp chopped Mashed Potatoes, 4 cups Philadelphia Light cream cheese, 4 tbsp
Remove skin (if desired) and dice potatoes. Place in a large pot and cover with water. Bring to a boil, simmer until potatoes are tender, about 15-20 minutes. Drain.
Return to pot and add cream cheese, sour cream, and chives. Mash together until well mixed, then slowly add the milk until desired consistency is achieved.
Add salt, pepper, garlic power, and/or paprika to taste (not included in nutritional info).
To make for the following day, simply follow the steps above and then allow to cool. Refrigerate.
To bake, place in a greased baking dish and bake at 350 degrees for about 30 minutes. You may also dot with butter and/or sprinkle with cheese (not in nutritional info.)
