Tofu Scramble with Field Roast Sausage

Ingredients
1 block extra firm tofu2 cloves garlic1 medium red or green pepper7 small/medium mushrooms2 "Field Roast" Vegetarian Grain Meat Sausages, Smoked Apple Sage4 tablespoons nutritional yeast2tsp salt4tablespoons canola oilSpices: curry powder, paprika, cumin, turmeric, whatever else you like
Directions
Makes three 1.5 cup servings.

Slice the field roast sausages into small disks, about a 1/4" inch thick, and brown on low heat in a skillet with 1/2 tablespoon canola oil.

In a separate skillet, sautee the chopped garlic, mushrooms, and peppers with about a 1/2 tablespoon canola oil. When the mushrooms start to soften and release their liquid, add the tofu. With a wooden spoon, break/crumble the tofu until it is in a scrambled-egg like consistency. Add all spices and continue to stir and cook. Keep the tofu cooking for about ten minutes, and add more spices as you go. I listed 4 tablespoons oil in the recipe because I typically have to add more as I go to get the spices to mix with the tofu properly, but you may not need as much. The dish is finished when you've flavored it to your liking and the tofu has uniformly turned to the color of scrambled eggs. Add the browned field roast sausage just as the tofu is finished and mix together. Enjoy!
