Quinoa Fried "Rice"

3 cups water1.5 cup uncooked quinoa3 tablespoons low sodium soy sauce2 garlic cloves, pressed1.5 cups frozen veggie mix4 eggs (beaten)
1. Bring water to boil
2. Rinse quinoa well - very important! If you don't, you quinoa will taste bitter.
3. When water is boiling rapidly, put pressed garlic, soy sauce and quinoa in to water.
4. Cover and lower heat to medium-low. Let boil for 15-20 mins. Do not uncover or stir.
5. Beat eggs together.
6. Combine frozen veggies and eggs and cook over low heat for 5-10 mins until veggies are thawed and eggs are cooked.
7. Mix everything together and enjoy!
