Greek Yogurt-Cream Cheese Frosting

Ingredients
Frosting(1) cup - (8 oz brick) 1/3 Less Fat (Neufchatel) cream cheese (Recommend: Philadelphia)(1) cup - non-fat Greek-Yogurt, plain (Recommend: FAGE Total 0%, plain)(1/2) cup - butter, salted (room temperature)(2) cups - confectioners’ sugar(1) teaspoon - pure vanilla extract
Directions
1. Using a food processor (preferably) or electric mixer, blend together the 1/3 Less Fat (Neufchatel) cream cheese, plain non-fat Greek-yogurt, and pure vanilla extract until the mixture is very light and fluffy.

2. Slowly fold in the confectioners’ sugar and continue whipping until the mixture is completely smooth and blended.

3. The frosting is ready for immediate use. Cover and refrigerate any leftovers and/or desserts you’ve frosted until ready to serve.

    Just made it exactly as per recipe. Tastes great but is very runny. Maybe the consistency depends on the type of Greek yogurt but in the future I would use a lot less than a cup. I will add a bit more butter and put it in the fridge and hope for the best. I need it in 2 hrs. - 3/29/14

    It does depend on the Greek yogurt used (the consistency varies quite a bit - I recommend Fage). If it's runny, you can add a packet of Whip-It or another stabilizer.
