Steelhead fruit and veggie meal

Ingredients
8 oz piece of steelhead trout with skin4 mini size bell peppers, cut into quarters3-4 oz unsweetened canned peaches1/3 tbsp butter1 tbsp extra virgin olive oil1/4 fresh lemon or limeSalt and pepper
Directions
Heat largest pan in your kitchen 3/4 full heat.
Put butter and olive oil in pan, melt and stir around to cover bottom of pan...use back of spoon.
Add bell peppers and peaches with a tbsp of the peach juice. Stir 4-5 minutes, then scoot the mixture to the sides so fish can be put in pan, skin side down first. Cover the pan and let cook for 4 minutes. Uncover, flip the fish, remove the skin, salt and pepper the fish, then cover again for 4 minutes. Uncover and flip fish again, cover 2 minutes.
Serve and enjoy with 3/4 cup of cooked rice per person. Entire meal has approximately 475 calories.
