Baked Oatmeal

Ingredients
2 cups of Bob's Red Mill Gluten-Free Rolled Oats; 4 medium ripened bananas;1 tsp vanilla extract;2 tsp ground cinnamon;2 tbsp light or amber agave nectar (can also use sweetner like splenda or maple syrup); 1 cup milk (can use non-fat, soy, or almond milk if desired); 1/4 tsp of salt; 1 tsp baking powder; 2 tbsp almond butter (or another nut butter or oil);2 medium eggs (optional);1/4 cup chopped pecans (optional); 1 cup chopped apples (optional).
Directions
Mash bananas and combine with vanilla, cinnamon, agave nectar, milk, salt, baking powder, almond butter, and eggs. Mix well. Add oats, pecans, and apples. Spray 8x8 square baking dish (you can also use a bread/meatloaf pan or even a muffin pan-alter baking time as needed) with cooking spray and pour in mixture. Bake at 375 degrees for approximately 45 minutes or until top is golden brown and/or oats have set.
