Chinese Chicken and Noodles

1.5 lbs skinned and boned chicken breast8oz linquini1/2 cup cream style peanut butter/2 cup water3 T low sodium soy sauce3 T cider vinegar1T sugar1T vegetable oil4 cups coarsely shredded cabbage or 1 package (10oz) coleslaw mix
Place chicken in a large pan of water and bring to a boil. Reduce the heat to low and simmer uncovered until no longer pink inside, approx. 10 min. Meanwhile cook the pasta as directed.
Whisk peanut butter, water, soy sauce, vinegar, sugar and oil or mix in a blender or food processor until smooth and transfer to a large bowl. Drain chicken, let cool and shred. Drain pasta and add to peanut butter mixture. Add chicken to pasta, add cabbage, toss well and serve. Serves 6.
