Couscous Surprise

Ingredients
1 c. bulgur**1-1/2 c. boiling water1/2 tsp. sesame oil1/2 large onion, minced2 tomatoes, finely diced1 bunch cilantro, minced1 large carrot, peeled and finely diced2 large cloves garlic, mincedsalt and pepper to taste
Directions
Combine bulgur, boiling water, and sesame oil in medium bowl. Cover tightly and let sit about 30 minutes, till steamed and fluffy. Meanwhile, chop your veggies. When bulgur has absorbed all the water, fluff with a fork and then add remaining ingredients. Serve at room temperature, or chillled.


**If you use couscous, you only need to let it sit for about 5 minutes, instead of 30. Nutrition info was calculated with bulgur.
