Seafood Pasta with Sherry Tomato Cream Sauce

2 lbs penne pasta (cooked)3 tbs oil3 tbs diced shallots3-4 cloves garlic (finely chopped)1 c dry sherry1 c chicken (or seafood) stock)1 c cream28 oz crushed tomatoes1-1 1/2 lbs steamed lobsterparsley and fresh grated parmesan cheese to garnish
In a large sauce pan cook pasta according to directions until al dente; drain
Heat oil in a large skillet over med heat. Add shallots and garlic, saute 5 minutes.
Deglaze pan with sherry, stir in stock and tomatoes. Bring to a boil.
Add seafood and cook until opaque. (do not over cook the seafood or it will take on a rubbery texture)
Stir in heavy cream; salt and pepper to taste; toss with pasta and garnish with chopped parsely and fresh parmesan.
Serving Size: 6-8 entree servings
