Banana Bread Breakfast Pudding

2/3 cup raw rolled oats1 1/3 cup water (or milk for a creamier version)1 medium-sized banana1/2 tsp vanilla1/2 scoop (about 2 tbsp) sun warrior vegan protein powder, vanilladashes of cinnamon & nutmeg to taste, plus additional stevia if desired1/2 tsp xanthan gum (optional, for thickening)
Cook the oats in the water/liquid of your choice, either on the stovetop or in the microwave, for about 4 minutes, or until most liquid is absorbed.
Let cool.
Once cooled (or, if you're impatient like me, while it's practically still boiling) combine your banana, oats/water mix, vanilla, and protein powder in the blender and run until smooth-ish. Taste off your finger and adjust sweetener/spices to taste.
Can be served immediately or refrigerated overnight and reheated in the morning for a speedy breakfast!
