Chicken Fajita Salad

Ingredients
one 6 oz. chicken breast4 tsp. fajita seasoning mix1/2 bag of precut lettuce mix (about 2.25 cups)6 cherry tomatoes1/2 C low-fat chedder cheese4 Tbls black bean and corn salsa2 Tbls light ranch salad dressing
Directions
Slice chicken breast into thin slices, brown in non-stick skillet. While chicken is browning, rinse lettuce and divide lettuce onto 2 large dinner plates. Chop the cherry tomatoes in half and place 6 halves onto each plate. Sprinkle 1/4 C low-fat chedder cheese onto each plate. After chicken is cooked so that it is no longer pink, sprinkle fajita seasoning mix onto chicken and cook for a minute longer. (Adding a tablespoon of water at this point helps) Divide the chicken evenly between the two plates. For the dressing stir together the black bean and corn salsa and the light ranch dressing. Drizzle this onto the salads or serve on the side if desired.
