baked stuffed zucchini

Ingredients
1 whole zucchini6 large mushrooms, minced1 garlic clove, minced2 oz red cooking wine (I prefer Marsala)1 tbsp salted butter2 tbsp Parmesan cheesesalt and pepper to taste
Directions
Slice whole zucchini in half. Scoop out insides. Heat butter in nonstick pan and cook garlic, minced, until golden. Add in zucchini "insides" and minced mushrooms and red wine; saute until liquid evaporates. Put mixture in zucchini boat and top with cheese. Broil on high for 3-4 minutes or until cheese is melted and slightly brown.
