Green Chile Stew (Caldillo in Spanish)

Ingredients
3 lb, chuck roast, cut intobite size pieces3 large onions, sliced8 4-oz cans chopped green chiles10 cloves garlic, chopped1/4 c. flour8 large potatoessaltpepper
Directions
Cut the roast into bite size cubesor (buy the already cut up stew meat), dredge in the fllour to coat. Spray a dutch oven with Pan cooking spray,, and over put in meat, onions and garlic and brown, salt, and pepper and brown meat. Then, add 1 cup of beef broth and enough water to cover the beef. add green chiles, Suimmer for about an hour and then add the cubed potatoes, adding water as necessary and simmer for another 30 to 45 minutes. Then, make a paste with leftover flour and water, and add to thicken the gravy. I am not sure exactly how many servings this makes but it the whole ductch oven.
