Easy Cheesy Broccoli Quiche

10 ounces chopped broccoli, cooked and well drained8 ounces Kraft lowfat cheddar cheese, shredded1 1/2 cups cheddar and chive egg beaters1 small onion, chopped finely1 cup fat free or 1% milk1 tsp. saltDash pepper
Spray a 9 inch glass pie plate with non stick spray. In the bottom of the pan put the broccoli, then the cheese and the onion. In a separate bowl, mix the egg beaters, salt, pepper and milk. Pour over the broccoli,cheese and onion mixture. Bake at 350 degrees for about 35-45 minutes or until a knife inserted into the center comes out clean. Remove from oven and let sit for 5-10 minutes. Serve.
I tried this recipe and I love it. Considering I hate eggs, that is pretty good :)
*note* Some lowfat cheeses melt better than others, I have had really good luck with kraft brand. I have never tried lowfat velveeta in this recipe but I bet that would be great too.
